I am glad you decided to write this, A client of mine who is a Vegan had concerns about Iron, as obviously he only gets non-heme iron which is less well obsorted by the body. It is very interesting that you note Vitamin C helps this obsortion and I am sure this will allay his concerns.

Really good write up, it was something I was always wondering as you get a lot of iron from red meats, but I was never to sure how a vegan would get iron.
