Keryl Cryer, VRG’s former senior editor of Vegetarian Journal, recently traveled on Amtrak from Baltimore to New Orleans. She reported: “The good news was, surprisingly, the food. They offer enchiladas on their regular menu as “Amtrak’s Vegan and Healthy Option.” It was pretty good for travel food. It uses “Awesome Grounds brand plant-based protein,” and it had black beans, corn, and yellow rice. On my trip down to New Orleans, they actually ran out! Can you believe that?”
