MANUEL CORTES ROMERO WINS VEGETARIAN RESOURCE GROUP $5,000 NEW YORK CITY AREA SCHOLARSHIP

Manuel wrote: “The smell of chuleta (pork chops) filled my small New York City apartment. Every morning, I would wake up to my mom flipping tortillas on our black rusty stove. This would bring me back to my birth country, Honduras. Before my mom brought me to the United States, I lived in Honduras in a sea coast town where Mother Nature was prevalent around me. When I moved to Queens, New York, I felt like I was in limbo. NYC will always be my city, but I always felt my connection with nature was limited. My body felt like it was covered in chains and I could only stretch so far. My mom would tell me that when I was young, I would play with baby chicks and jump on dogs. Although I had a more intimate connection with nature back in Honduras, I wasn’t going to let my urban environment limit my passion. For me, the quickest and easiest way to feel a bond with Mother Nature was to change my eating habits. I personally felt eating a carcass wasn’t very appetizing. This was conflicting at the time because I also didn’t want to have the culture disconnect since a lot of the foods from my country incorporated different types of meat. One night I truly thought about this new lifestyle I wanted to convert to. I realized that my favorite cultural foods were already vegetarian: sopa de frijoles, baleada, etc. I was finally able to begin this new way of life.”

Manny created a club in high school to promote vegetarianism. He wrote a newsletter that included a vegetarian recipe and information about environmental issues. In addition, he promoted vegetarianism through the school Model Congress Debate Club. A reference wrote that in one debate, “He ended by saying that ‘What makes my life more valuable than those birds?’ I can’t say he turned the room into vegetarians, but what I can say is he left the room questioning why humans are superior and other species are inferior. I began thinking to myself, “Why do humans get a pass on taking life away?” The Reference continued, “Anytime I ask for help at our food pantry, Manny is the first person to help unload hundreds of heavy boxes filled with fruits and vegetables for our community. He is the type of person who takes action rather than complaining about his problems, and is extremely eager to help others.”

Manny wrote, “Veganism to me is giving an animal another chance at life … This scholarship will give me the opportunity to change the life of my family. I will have the chance to walk down an American college campus, something my ancestors would kill for. Of course, I don’t mean to actually kill as that would be counterintuitive to my lifestyle. Being vegan to me is synonymous with humility and humbleness, and knowing that we aren’t superior to other species…”

Manny is enrolled in Animal Science at Cornell University. He is participating in the Cornell Speech and Debate team and will be doing an informative speech on vegetarianism for the next semester. He said, “I plan on going to graduate school to receive my Doctor of Veterinary Medicine licenses and PhD.”

Citrusy Sheet Pan Veggies

(Serves 6 as a side dish)

Sheet Pan Veggies

Nonstick spray

3 cups peeled and cubed sweet potato

2-3 cups halved Brussels sprouts

1 cup chopped onion

2 cloves crushed garlic

Salt and black pepper to taste, optional

Optional to serve: 1/2 cup dried cranberries, cherries, pecans, and/or walnuts or fresh chopped/dried parsley

Citrus Vinaigrette

Juice of one orange; zest of 1/2 orange

3 Tablespoons olive oil

1 Tablespoon maple syrup

1/2 teaspoon cinnamon

Pinch cayenne, optional, to taste

Salt and black pepper to taste, optional

Preheat the oven to 375 degrees. Coat a sheet pan with edges with non-stick spray. Toss all chopped veggies with crushed garlic and salt/pepper if using. If desired, lightly spritz the top of veggies with more non-stick spray. Bake for 15-20 minutes, until all vegetables are soft and lightly browned. While veggies bake, make Citrus Vinaigrette. To make the vinaigrette, whisk together all ingredients or add all ingredients to a jar with a lid and shake until combined. When done, toss baked veggies with Citrus Vinaigrette, top as desired with dried cranberries or cherries, walnuts, pecans, or parsley.

Cook’s Note: Oranges vary widely in sweetness. Test the Citrus Vinaigrette before serving and if it’s too tart, add another teaspoon or more, to taste, of maple syrup. Store extra vinaigrette in the fridge and try it on salads or to marinade tofu.

Wedding with Delicious Vegan Options Served at NY’s Brooklyn Botanic Gardens

VRG’s Co-Directors recently attended a wedding at Brooklyn Botanic Gardens in New York. The bride is vegetarian and among the 75 attendees there were about 12 vegans plus several vegetarians. The vegan food options were delicious. We enjoyed pasta with a creamy cashew sauce and roasted tomatoes and herbs, as well as roasted vegetables on a bed of quinoa with sauce. The bride provided all the vegan guests gorgeous looking gourmet vegan doughnuts as dessert.

HONEYGROW

Honeygrow is a Mid-Atlantic restaurant chain that primarily specializes in stir-fries and salads. While not being an exclusively vegetarian or vegan restaurant, they have a few vegetarian and vegan menu options, such as their red coconut curry stir-fry. In addition to this, Honeygrow is known for their “create-your-own” options, and highly customizable selection, meaning that you really have a lot of freedom to create a meal that suits your dietary preferences. According to their website, Honeygrow is a play on the phrase “honest eating + growing local.” They source fresh local produce whenever possible. For those with peanut allergies, Honeygrow does not use peanuts in any of their recipes, nor do they carry peanuts/peanut products at any time.

My experience there was very positive. It was a small, local, welcoming location, with a super easy to use touch-screen ordering system. I bought the red coconut curry stir-fry, which contains a vegan curry sauce, rice noodles, roasted tofu, pineapples, jalapeños, carrots, scallions, and cilantro. This meal is also gluten-free, as their rice noodles and brown rice are all gluten-free bases for their stir-fry. The wait time was low, facilities were well maintained, and the food was excellent. You can definitely tell when certain ingredients are fresh, such as pineapples and jalapeños—and those were definitely fresh, packing a solid punch of flavor that I definitely would try again.
