Fannie Fonseca-Becker, M.S., R.D., and The Vegetarian Resource Group have produced a guide to Vegetarian Resources in Latin America. Included are over 50 vegetarian restaurants, health food stores, and local vegetarian contacts.
In Columbia (Santa Fe de Bogota), enjoy a delicious vegan lunch while listening to classical music at El Arbor de la Vida. All their desserts are sweetened with panela, a non-refined product from the first pressing of the sugar cane plant. Also in Bogota, you can try the vegetarian Vega restaurant, which offers plantains, beans, brown rice, yucca, and fresh salads.
In the mood for soy products while in Mexico City? Try Super Soya, which offers soy products, veggie burgers, and tacos. Or relax in Taxco, Mexico, at the Monte Texco Resort. While your food is being prepared you can stroll on the terrace and admire the view at the sound of romantic boleros played by live musicians.
In Panama City, visit Mireya, which is one of three vegetarian restaurants run by the same owner. Daily menus include vegetarian burgers, soy shrimps imported from Israel, gluten dishes, and vegetable pies. Or feast on international and Peruvian vegetarian cooking using organic foods at Natur, in Lima, Peru.
