SERVING VEGETARIAN FOOD
What happens when young vegetarians want to go away to camp or college? The Vegetarian Resource Group conducted a survey of institutions offering vegetarian or vegan food. Across the country meatless eaters are able to learn and have fun while still finding nutritious meals.
For example, Dominican in California offers vegan pizzas, vegan enchiladas, tomatoes stuffed with couscous, Swiss Chard with lentils, and black beans with fennel. Wesleyan University in Ohio features hummus, tabouleh, fajitas, bulgur pilaf, stuffed zucchini, risotto, grilled veggie sandwiches, and bean burgers. Lewis and Clark in Oregon even serves seitan and tempeh dishes.
Multonomah Bible College fills up their students with Hungarian noodle bake, quesadillas, and broccoli quiche. At the University of Wisconsin find veggie strudel, black bean pizza, polenta with cheese, lasagna stir-fries, and Italian tortillas. Dishes at schools will of course change according to demand.

Also available is our Quantity Recipe Packet, with over 25 vegan recipes designed for 25 and 50 servings. They include nutritional analyses, as well as serving and garnishing suggestions. Also included is a list of vegetarian food suppliers, who pack in quantity sizes. This packet costs $15 for non-students and $5 for students.
The Vegetarian Resource Group is a non-profit organization, dedicated to educating the public about vegetarian and vegan diets. Vegetarians do not eat meat, fish, or fowl.
