For many vegetarians, mashed potatoes and stuffing is a perfectly acceptable Thanksgiving meal. Custom and personal preference, however, sometimes call for something a little more distinctive. Mary Clifford and Vegetarian Journal have produced a Thanksgiving Treasures menu which will provide that touch.
The Thanksgiving menu features: Simple Gravy, Herb-Seasoned Potatoes, Tofu in Phillo, Old-Fashioned Stuffing, Tempeh with Leeks, and Creamy Winter Squash soup. Baked Apples and Pears top off the deliciously filling meal.
Simple Vegetarian GravyIn a 2-quart saucepot melt margarine over medium heat. Stir in flour until dissolved. Add remaining ingredients. Cook, stirring, over medium heat, until thickened. (29 calories and 1 gram of fat per 1/4 cup serving
