Chef Nancy Berkoff is a vegetarian registered dietitian who has cooked meals for one to a thousand; for movie stars and lucky newspaper readers. She is author of Vegan in Volume, conducts an on-line vegetarian foodservice course, and teaches budding chefs at Los Angeles Trade Technical College. Nancy earned a food technology degree from Rutgers University and a doctorate of Education from Nova University. She has written for the Orange County Register, National Culinary Review, and Chef Magazine.
