Vegetarian/Indian. Annapurna's World Vegetarian Café & Chai House serves Ayurvedic Indian cuisine along with specialty beverages. Vegan items include Cardamom Pancakes, Tofu Scramble, Lebanese Wrap, South Indian Sampler, and Shepherd's Pie. Annapurna's also has their own full service bakery specializing in wheat-free, dairy-free, egg-free, gluten-free, and sugar-free desserts. Classes are offered in their School of Ayurvedic Cooking next door to their Albuquerque restaurant on Silver Avenue. Each location offers their own specials which are updated daily on their website. Annapurna's on Silver Avenue is near the University of New Mexico in Albuquerque. Annapurna's on 4th Street is in the old Dion's building in the North Valley.

Vegan. Vegan Vato has found a home as a food pod inside the Imperial Motel complex. Diners will be happy to satisfy their cravings for menu options such as the Vato Burger (an Impossible Patty served on a sesame bun with sautéed mushrooms, onions, green chile, queso, and slaw, with a side of fries) and Hella Good Tacos (4 street-style tacos that include cilantro and shredded cheese—filled with up to 2 proteins—and served with beans, rice, and salsa). The protein options are varied to suit every vegan’s tastebuds: Impossible Ground; Seitan Mushroom Asada; Birria-Style Jackfruit (Birria is a slow-cooked Mexican stew); BBQ Tempeh; and Jalapeno-Roasted Cauliflower. Of course, no Mexican fusion menu is complete without a Quesadilla and Loaded Fries—both served with a side of guacamole. And a bonus for those with allergies: the queso is nut-free. Vegan/Mexican. Happily, Vegos menu proclaims, “Always Made from Scratch.” There are some gluten-free options too. Specialties include Enchilada Plates, Stuffed Sopapilla (fried pastry dough) with beans, potatoes, and choice of chile and vegan protein. Burrito choices abound with tofu, seitan, beans, and more. If you feel like taking charge, El Jefe features red chile jackfruit, Spanish rice, pinto beans, potatoes, “queso,” and garnish. Tofu Seitan Scramble and Garbanzorizo Breakfast Burritos are served daily until 3pm. They offer Little Bites Burrito varieties too. One of their Side dishes is Elotes - roasted corn on the cob with cilantro, seasoned, chopped almonds, garlic aoli, and lime. Besides local Kombucha, there are sodas and rotating Agua Frescas. To finish on a sweet note, Vegos offers a few Dulces to tempt you. A couple are Churros, or Dessert Empanadas with various fillings, depending on the day.

Working out of a glossy black-painted food truck flying a Jamaican flag, Ras Rody’s Jamaican Vegan is adding some welcome 100% plant-based Caribbean goodness to Santa Fe’s dining landscape. Southwest Jamaica native Ras Rody and his family recently moved to Santa Fe from Dunedin, Florida, where Rody’s truck had carved out a niche serving food at a Tampa-area farmers’ markets. Ras Rody's Organic Kitchen in Negril, Jamaica has been an icon of Ital food and Rasta philosophy for over 20 years and is now run by Rody’s children. The daily offerings in Santa Fe vary depending on the day and the ingredients, are posted on their Facebook account.
