1) GREETINGS FROM THE EDITOR
Hello Readers,
I hope you are thawing out from this tough cold winter if need be, or are
lucky to be enjoying a nice warm climate. A gradual change in season can also
yield a gradual awakening in nature as well as one's being for personal revelation.
I am grateful to have been able to have had such an experience, as there are
more to come in the future due to the conscious decision I have made in my
diet. Walking through the home of a relative my ear caught an undesired introduction
from a gourmet chef praising the taste of another's execution of one of the
most horrid dishes I have knowledge of, Foie gras. Like an activated trigger,
images flooded my head of knowledge divulged by an old French teacher as well
as my own research and caused me to release an involuntary shriek. My relative
inquired of my well-being, and so I explained to them the processes and
methods of preparing the saddening dish. This new information in mind, my
relative then began to question the practices of the preparations of other
animals for food. At that point, I realized that I was an involuntary activist,
whether I wanted to be or not. Therefore I appreciate and welcome all new
experiences, as I learn from everyone and am honored to share information
with others.

5) GET READY FOR A VEGAN PASSOVER
Traditionally there are many food restrictions during the eight days of Passover.
If you're vegan, preparing a wide variety of foods during Passover can be
overwhelming at times. Thankfully, The Vegetarian Resource Group offers two
vegan Passover recipe books, Vegan Passover Recipes and No Cholesterol Passover
Recipes. See a sample recipe below!

Cream of Asparagus or Broccoli Soup (from Vegan Passover Recipes)
(Serves 4)
People will be amazed and delighted with this non-dairy, lowfat "cream" soup.
- 2 cups frozen (thawed) or fresh asparagus spears or broccoli florets
- ½ cup finely chopped onions
- 1 cup vegetable stock
- 1 cup peeled and boiled white potatoes, mashed
- ½ teaspoon white pepper
Microwave asparagus or broccoli and onions for 3 minutes or steam for 8 minutes,
until very soft. Retain any liquid (about ¼ cup).
In a blender, combine cooked vegetables, potatoes, and pepper. Process until
pureed. Place in a small medium pot and allow soup to simmer covered for 5
minutes. Serve hot, garnished with additional chopped steamed asparagus or broccoli.

6) TEFF LOVE VEGAN ETHIOPIAN COOKBOOK NOW AVAILABLE
Our friends at The Book Publishing Company recently published a vegan Ethiopian
Cookbook called Teff Love.
Vegan Ethiopian food is delicious and now you can use Teff Love to prepare
this cuisine at home. First, you'll find a recipe to make injera (Ethiopan
bread). For breakfast you can prepare Ye'shimbra Duket Kita (Savory Chickpea-Flour
Pancakes) or Ye'beqolo Genfo (Creamy, Cheesy Corn Grits with a Spicy Seasoned-Oil
Another chapter features spicy red sauces and stews including Ye'Atakilt Wot
(Potatoes, Carrots, and Cauliflower in a Spicy Sauce), Ye'misser Wot (Red
Lentils in a Spicy Sauce). If you don't like spicy food, one chapter highlights
mild sauces and stews including Ye'Ater Kik Alicha (Split Peas in a Mild Sauce)
and Ye'atakilt Alicha (Stewed Cabbage, Potatoes and Carrots in a Mild Sauce).
The section on cooked vegetables and casseroles offers Ye'Abesha Gomen (Tender
Stewed Collard Greens) and Ye'Zelbo Gomen Be'Karot (Tender Kale with Carrots,
Onion, and Mild Spices). You'll also find cold dishes including Ye'Kaysir
Atakilt (A Salad of Tender Roasted Beets and Fresh Herbs in a Citrus Dressing)
and Azifa (Tangy Lentil Salad). Finally, a section on beverages and sweets
includes Telba (A Roasted-Flaxseed Shake) and Mocha Teff Brownies.

7) VEGETARIAN ESSAY CONTEST

I just saw the notice in the VRG Journal of the Essay contest for 2015. The
winner for 2014 wrote a great essay, and she also has the same name and is
the same age as one of my granddaughters. I am spurred by that to say that
I would like to see the contest prize increased to $50.00, and I will donate

8) DIETARY REFERENCE INTAKES CALCULATOR FOR HEALTH PROFESSIONALS
The Dietary Reference Intakes Calculator for Health Professionals is a recently
released free app from the USDA. This handy calculator is available in both
Apple and Android versions and as a web-based tool. While targeted at health
professionals, especially registered dietitians, this calculator can be easily
used by anyone. You put in height, weight, age, sex and an estimate of activity
level and the calculator instantly reports BMI, calorie recommendations, and
recommendations for protein, fat, carbohydrates, water, vitamins and minerals.
If you have questions about any of the nutrients, you can tap the screen for
additional information. Most of the vitamins and minerals are linked to the
National Institutes of Health's excellent fact sheets. The app also allows
users to read about the Dietary Reference Intakes which are what daily nutrient
recommendations are based on. Nutrition education resources for diabetes,
heart disease, kidney disease, weight management, and other conditions are
easily accessed from this app. This app does not tell you whether or not your
diet meets recommendations - for that you can use USDA's SuperTracker, vegan
RD Jack Norris' Peacounter, or other software. I've recommended the web-based
version of this calculator for several years; I'm happy to recommend this app.
