VRG Foodservice Advisor Chef Nancy Berkoff, RD presented on Tips for Offering vegan foods in institutions for the Maryland Dietetics in Health Care Communities conference.
In May we will be doing an in-service for ten University of Maryland Dietetic students.
This month we are busy responding to applications for our college scholarships. Next deadline is February 20, 2023. In addition to our annual $20,000 in scholarships, this year we will be supporting New York City area students with an additional $10,000, due to a generous donor.
We continue to receive requests from prisoners for vegetarian information.
We've answered questions about our veg polls for several media and researchers, plus a consultant looking at Blacks and Latinos in the animal rights movement. Watch for the results of our newest poll that we are running in March, 2022.
Past polls on numbers and opinions of vegetarians/vegans are here

7) VIDEO: BLUEBERRY FRENCH TOAST CASSEROLE
Try this simple vegan French Toast Casserole for your next brunch or breakfast gathering. Using bananas as the base, it pulls together in minutes and can rest in the fridge overnight, all ready to bake the next morning. And just wait until your guests smell the lovely aroma of French Toast Casserole as you pull it from the oven! A wonderful way to begin the day.
